Fresh caviar is obtained from seeds of female Starry Sturgeon eggs. After being caught with fishing nets while they are still alive, they are taken to a special laboratory and emptied into bags. History of caviar industry in Iran

There is not so many evidences of Iran caviar in the past. Herodotus in his writings have referred to the Caspian Sea caviar. The Chinese entered the industry from the 10th century BC and raised fish in the Yangtze River. Some evidences suggest that the sturgeons were taken from the Caspian Sea to the Ecbatana, an ancient city in Media in western Iran. The caviar had a very high value among Russians too, which you can see the image of sturgeon stamped on their copper coins.

During the Qajar dynasty and the Treaty of Turkmenchay, the Russians seized the southern shores of the Caspian Sea and took over the Iran caviar industry until it remained unchanged for a few years. Then after a while, in post-tsar period, a friendship agreement between two countries was announced, a contract for developing a fishing complex company. The company was awarded the right for fishing on the coasts of Caspian Sea’s shores and major rivers up to 25 years. The contract was valid until year 1952. At this year, the national Iranian fishery was declared. Years of Russian intervention in the Caspian Sea led to the overfishing on the southern shores of the sea that reduced the number of many kinds of fish.

The main regions for caviar fishing is in the southern Caspian Sea, especially in the Sefidrood River. Researchers say that in past times, 500 tons of caviar were omitted from the Sefidrood River in the past. Other important areas for Iran’s caviar are Astara, Kiashahr, and Qareh-Soo, where sturgeon camps are established along their rivers.

The main reason for migration of fish to the southern Caspian Sea was its favorable condition for migration and spawning. Of course, one of the major causes of the depletion of these valuable fish in the northern Caspian Sea was its severe winter cold, the shallow depths of the northern Caspian Sea, the construction of huge dams on rivers and the pollution of factories and ships. For this reason sturgeon mainly live on the southern coast and their main home is the openings of the northern rivers.
